Fool
Ingredients

- Fool Medley (Cooked Broad Beans)
- Garlic
- Plain Yoghurt
- 2 Tomatoes
- Chilli Powder
- Lemon
- Tahini
- Salt
- Aubergine Dip
- Tortilla Wraps
Time Needed: 30 minutes
Serves: 3
Step 1
Turn the hob up to medium hot heat (6) and add the contents of the tin of Fool Medley to the pan. Fill half the tin with water and add to the pan. Allow the mixture to heat for approximately ten minutes.
Step 2
While the pan is heating, dice two tomatoes. Squeeze the whole of one lemon over the tomatoes and leave the flavours to mix. Add a pinch of salt.
Step 3
In another bowl, crush two cloves of garlic. To the garlic add ten tablespoons of natural plain yoghurt.
Step 4
To the yoghurt and garlic, add three teaspoons of tahini.
Step 5
Once the beans have heated, add chilli powder. You can add as much or as little as you like depending on your preference.
Step 6
Drain the water from the beans and return to the heat, reducing the heat from medium hot to low.
Step 7
Add the yoghurt mix to the pan, followed by the tomato mix. Stir together gently.
Step 8
After two or three minutes on the heat, remove the mixture in to a large serving bowl. Add three more table spoons of cold yoghurt and stir together.
Step 9
Drizzle two tablespoons of olive oil in to the bowl and serve.
Serve with heated tortilla wraps and aubergine dip.
Aubergine dip
This can be bought ready made in a tin. Spread it in a circle on a plate and add a touch of olive oil to serve.
